Adobo (Polynesian Sweet n' Sour)

3-5 pounds cabrito cut into pieces,

1 cup cider vinegar
|
|
well browned, boneless or bone-in
|
2 cups water
|
|
3 tablespoons olive or other oil
|
¼ cup soy sauce
|
|
1 onion, cut in slices
|
3 tablespoons Worchestershire
|
|
8-10 cloves of garlic
|
3 bay leaves
|
|
6-8 peppercorns
|
6-8 rounded teaspoons sugar
|
|
½ teaspoon ground pepper
|
Salt to taste
|
Brown the meat well in a heavy pot with a cover. Add sliced onion and cook 2 or 3
minutes until wilted. Add all other ingredients, cover and simmer for about 1 hour.
Stir occasionally. Add water for more sauce or uncover for last 10 minutes to reduce
liquid. The sauce is delicious on rice.
