Adobo (Polynesian Sweet n' Sour)

3-5 pounds cabrito cut into pieces, 1 cup cider vinegar
   well browned, boneless or bone-in        2 cups water
3 tablespoons olive or other oil ¼ cup soy sauce
1 onion, cut in slices 3 tablespoons Worchestershire
8-10 cloves of garlic 3 bay leaves
6-8 peppercorns 6-8 rounded teaspoons sugar
½ teaspoon ground pepper Salt to taste

   Brown the meat well in a heavy pot with a cover. Add sliced onion and cook 2 or 3 minutes until wilted. Add all other ingredients, cover and simmer for about 1 hour. Stir occasionally. Add water for more sauce or uncover for last 10 minutes to reduce liquid. The sauce is delicious on rice.
