Fiesta Burgers
Time: prep 10 minutes, cook 25 minutes

2 pounds ground beef divided into 4 patties

sea salt and freshly ground pepper to taste

1 Tbl. olive oil
|
1 Tbl. jalapeno pepper seeded & minced
|
|
1 24 oz. jar picante sauce
|
1 small onion, chopped
|
|
8 oz. (2 cups) Monterey Jack Cheese, shredded
|
1 small tomato, chopped
|
1. Salt & pepper the meat and form 4 patties.
2. Heat oil in skillet over med-high heat. Add meat patties and cook about 10 minutes or until medium rare, turning halfway through cooking.
3. Add picante sauce; heat to a boil. Reduce heat to low and cook 10 minutes.
4. Divide cheese. Cover and cook until cheese melts.
5. Remove to platter or plates. Top with onion, pepper and tomato.
